If any fruit should have been given a popularity award in 2015 it would definitely have been the avocado. The health craze that has taken over the world made sure that this green fatty is loved and embraced by all health freaks because it’s loaded with nutrients.  One particular method of preparation that continuously pops up on instagram, tumblr, pinterest and youtube is the baked egg in avocado recipe. Read on to discover how to make this quick and simple snack.

Although I’m mostly firmiliar with a sweet preparation of this fruit which my mom used to make with coffee (recipe will follow soon) the avocado is mostly known due to the Mexican guacamole dip. The snack that I will present to you today is another savory dish.

Ingredients (2p)
1 avocado
1 egg (preferably small)
olive oil
salt&pepper
paprika powder
chives

Directions
Start off by preheating the oven at 180 degrees for 10 minutes. Cut the avocado in half, twist it and take out the pit. Since the egg  didn’t fit in the small avocado I scooped a bit of the flesh out to make it fit. Just have it as a little snack during cooking. 😉

Then place the egg in the avocado. The neatest and easiest way to do this is to break the egg in a bowl and then carefully scoop out the yolk with a spoon first. Afterwards carefully add the eggwhite (again with spoon). Richly season everything with the ingredients listed above or the ones of your own choosing.

Finally place the avocados in the oven for about 15-20 minutes at 220 degrees. Just make sure the eggwhite is fully cooked after you take the avocados out. Lastly dribble some olive oil on it and spoon away!

This recipe has been praised allround as a healthy breakfast, but to me personally it’s a bit too hearty. I’d rather eat it for lunch or as an addition to a couscous, bulgur or freekeh salad.
